Abstract:
PURPOSE: To solubilize a flavonoid in water in high efficiency by using an alkali-resistant cyclodextrin synthetase.
CONSTITUTION: A solubilized flavonoid resistant to precipitation even after neutralization can be produced by solubilizing a flavonoid in an alkaline region of pH 8 or above and/or with a cyclodextrin and subjecting the product to sugar transfer reaction with a cyclodextrin synthetase, especially a cyclodextrin synthetase collected from the A2-5a strain of the genus Bacillus and having high activity in alkaline region, thereby forming a glucoside of the flavonoid.
