Abstract:
PROBLEM TO BE SOLVED: To provide a roll-in fat and oil composition capable of providing a layered bakery product excellent in extensibility and having good floating and mouth melting.SOLUTION: There is provided a roll-in oil and fat composition in which an oil phase is a continuous phase and specific gravity is less than 0.9. The roll-in oil and fat composition preferably has a melting point of an oil phase of 36°C or higher. Also the roll-in oil and fat composition preferably contains 25 mass% or more of a transesterified oil and fat in the oil phase. Further the roll-in oil and fat composition preferably has a content of an emulsifier of 0.1 to 5 mass%.SELECTED DRAWING: None
