Abstract:
PURPOSE: To provide the subject new enzyme having excellent salt-tolerance and suitable for the use as a food to be prepared under a condition of high salt concentration, e.g. a seasoning.
CONSTITUTION: A salt-tolerant carboxypeptidase resistant to inactivation under a salt concentration of 25 W/V% (reacting at 30°C for 20min using 2mM-Z-Glu- Tyr as a substrate). The enzyme can be separated from commercially available enzyme preparation by conventional method comprising a combination of dialysis, gel-filtration, liquid-chromatography, centrifugal separation, electrophoresis, etc.
