Abstract:
PROBLEM TO BE SOLVED: To obtain liquid in which shells abundantly containing a mineral component are dissolved, capable of effectively utilizing the shells which became a waste material, and is useful for food processing, etc., by dissolving crushed shells until pH of vinegar containing a prescribed amount of citric acid becomes a prescribed value.
SOLUTION: Crushed shells are dissolved until pH of vinegar containing 1-3wt.% citric acid becomes 6.8 to 7.0 and the resultant solution is mixed with a chitosan solution to provide the objective liquid in which shells are dissolved, which contain ≥1.5 wt.% mineral component useful for human bodies. Furthermore, the chitosan solution is obtained by dissolving 5-10 wt.% chitosan in vinegar.
