Abstract:

PURPOSE: The titled powder for eliminating peculiar flavor defect and smell of ingredient of fried food, enriching savor, improving taste, obtained by adding onion powder to grain flour.

CONSTITUTION: Taste improving powder for fried food obtained by adding 1W 80wt% onion powder to grain flour such as wheat flour. By adding this taste improving powder, for example, in a fried cutlet of mutton, peculiar flavor defect and smell of mutton are eliminated, and a taste close to pork is obtained. In a fried cutlet of pork or chicken, nice-smelling flavor and taste are felt, and one feels it softer than an existing fried cutlet especially after it is cooled. The powder provides fries of fishes and shellfishes or TENPURA (Japanese deep-fat fried food) of fishes and shellfishes and vegetables with good flavor, and improvement in taste is observed.
