Abstract:

PURPOSE: To utilize fish meat containing jellifying substance in a similar manner as a normal fish meat free from jellifying sustance, by adding a jellification preventing agent selected from nitrites, chlorites, etc. to the meat.

CONSTITUTION: Fish meat containing jellifying substance, e.g. meat of flatfish, merluza, bluefin tuna, salmon, flying fish, etc., is added with at least one compound selected from nitrites such as sodium nitrite, chlorites such as sodium chlorite, hypochlorous acid, hypochlorites such as sodium hypochlorite, bromates such as potassium bromate, chlorine dioxide, hydrogen peroxide, benzoyl peroxide, ammonium persulfate, calcium oxide, and alums. The compound may be added as solid powder, gaseous state, or aqueous solution.
