Abstract:
PROBLEM TO BE SOLVED: To provide yeast and yeast extract with high contents of γ-Glu-Abu and/or γ-Glu-Abu-Gly.SOLUTION: Yeast is modified so as to reduce the activity of Abu-related compound exporter protein and/or increase the activity of Abu-related compound uptake protein, to obtain yeast with high contents of γ-Glu-Abu and/or γ-Glu-Abu-Gly.
