Abstract:
Disclosed are: a stevia extract mixture in which the solubility of a stevia extract that contains not less than 90% by weight of a poorly soluble Rebaudioside-A is improved; and a method for dissolving a stevia extract that contains not less than 90% by weight of a poorly soluble Rebaudioside-A.
Specifically disclosed is a stevia composition which contains a stevia extract that contains not less than 90% by weight of a poorly soluble Rebaudioside-A and a water-soluble polysaccharide so that the dry weight ratio of the stevia extract to the water-soluble polysaccharide is from 100:5 to 0.4:99.6. Also specifically disclosed is a method for dissolving a stevia extract, wherein a stevia extract that contains not less than 90% by weight of a poorly soluble Rebaudioside-A is mixed with a water-soluble polysaccharide at a dry weight ratio within the above-mentioned range and the thus-obtained mixture is dissolved in an aqueous solvent.
