Abstract:
A fermented apple cider containing Chinese privet and a preparation method therefor. The method comprises the following steps: coring apples, then beating and crushing the apples, adding a sulfurous acid solution while crushing, and filtering to obtain clear apple juice; adding pectinase and white granulated sugar to the apple juice and then letting stand for 10-12 hours to obtain apple pulp; taking fresh fruit of Chinese privet, adding a sulfurous acid solution while crushing to obtain privet pulp, adding the privet pulp to the apple pulp, adding yeast, stirring evenly, and performing alcohol fermentation; after alcoholic fermentation is completed, filtering to remove residue, filling a full tank to store the alcohol, and performing post-fermentation; and after post-fermentation is completed, filtering the alcohol, clarifying and packaging to obtain fermented alcohol containing Chinese privet and apple.
