Abstract:
PROBLEM TO BE SOLVED: To provide a new yeast excellent in a property for fermenting ethanol from glucose at a high temperature, and having excellent cohesiveness, and to provide a yeast suitable for primary fermentation (ethanol fermentation from hexoses) in a two step fermentation method suitable for producing ethanol from a biomass raw material.SOLUTION: A new yeast excellent in a property for fermenting ethanol from glucose at a high temperature and low pH, having excellent cohesiveness, and belonging to Schizosaccharomyces japonicus; especially Schizosaccharomyces japonicus SS4-5 strain; a yeast which is a mutant of the SS4-5 strain having high temperature low pH fermentability and cohesiveness; and a method for producing ethanol using the yeast, are provided.
