PURPOSE: To obtain the title fatty oil spreadable over a broad temperature range, good in workability, with favorable flavor even if a hydrogenated fat or animal fat is used as the raw material, also favorable in the melt feeling in the mouth, by ester interchange of a fatty oil using a 1,3-site-specific lipase.
CONSTITUTION: The objective fatty oil having physical properties better than those of the raw material mixture can be obtained by selective ester interchange of a fatty oil of trace moisture content of pref. ca. ≤100ppm using a 1,3-site- specific lipase. Said fatty oil usable as raw material is e.g. a mixture of medium- melting fatty oils, mixture of high-melting and medium-melting fatty oils. The 1,3-site-specific lipase is acted on a composition comprising medium-melting and high-melting fatty oils to carry out the ester interchange. As the result, the objective fatty oil 34-38°C in melting point could be obtained. Said lipase is e.g. of Rhizopus, Aspergillus, Mucol, Humicola, Penicillium origin.
