Abstract:
To provide food products which comprise milk proteins and non-animal proteins and have attributes identical or superior to milk and/or its derivative dairy products.SOLUTION: A dairy-like food product comprises: a single type of milk protein consisting of a recombinant β-lactoglobulin; one or more native and/or recombinant non-animal proteins and/or hydrolyzed non-animal proteins; and lactic acid bacteria; where i) the food product is essentially free of any milk protein other than the single type of milk protein consisting of a recombinant β-lactoglobulin, and ii) the recombinant β-lactoglobulin imparts a texture or taste of a dairy product to the food product.
