Abstract:
PURPOSE: To obtain an emulsion useful for health food as a low calorie fat substitute by emulsifying carbohydrate, protein and edible fat or oil with an emulsifier in a specified state so as to prepare a two-phase emulsion consisting of a continuous aq. phase and a dispersed phase. CONSTITUTION: This emulsion useful as a low calorie fat substitute is a two- phase emulsion consisting of a continuous aq. phase and a dispersed phase and contg. 1-70wt.% carbohydrate (A), 0.05-12wt.% protein (B), 1-50wt.% edible fat or oil (C) and an emulsifier (D). All of the component C and part of the component B exist as protein-fat or protein-oil aggregates in the dispersed phase and the remaining unaggregated protein has been dissolved or suspended in the aq. phase. A thickener such as an alginate or xanthane gum and a pH adjusting agent such as hydrochloric acid or sulfuric acid are preferably contained.
