Abstract:
To provide dried noodles containing richly nutritious wheat bran having good texture, sufficiently strong, and less likely to be broken.SOLUTION: The method for producing dried noodles includes a step of using raw material flour to prepare dough, a step of molding the dough into a prescribed shape, and a step of drying the molded dough; the raw material flour contains 10 to 40 mass% of wheat bran, 15 to 60 mass% of buckwheat flour, 3 to 15 mass% of gluten, and 10 mass% or more of wheat flour; the wheat bran is preferably derived from white wheat and is preferably thermally processed.SELECTED DRAWING: None
