Abstract:
To provide a wheat bran-containing compression/heating sterilized liquid food including, wheat bran blended thereto for coping with health orientation, and easily and efficiently suppressing deterioration of flavor and taste and browning of the food which easily occur when being subjected to compression/heating processing, and a production method thereof.SOLUTION: There is provided, a production method of a wheat bran-containing compression/heating sterilized liquid food, the method uses wheat bran derived from white wheat as the wheat bran. The wheat bran derived from the white wheat is preferably subjected to heating treatment. It is preferable to use one or more kinds of Australian standard white and Western white for the white wheat. The wheat bran-containing compression/heating sterilized liquid food, is formed by blending 5-80 mass% of white bran derived from white wheat, in dry mass conversion.SELECTED DRAWING: None
