Abstract:

To provide a method for producing Shochu which has a richer mineral content than that of conventional Shochu, has an extremely excellent flavor, has a remarkably lower initial oxidation-reduction potential value than that of conventional Shochu, and thereby has a hangover-mitigating effect.

This method for producing Shochu uses alkali reduced water (electrolytically reduced water), in more detail, the method for producing Shochu uses alkali reduced water (electrolytically reduced water) obtained by hydrolyzing water.
