Abstract:

To provide delicious Xiao long baozi taking into consideration the safety, hygiene, and environmental asset protection of domestic products, by establishing a technique for producing Xiao long baozi meat filling which exceeds meat filling derived from pork through the use of a meat-texture fish protein concentrate (MTFPC).

A method for producing the Xiao long baozi which has as the raw material, the meat texture fish protein concentrate (MTFPC), commonly referred to as "marine foods", uses the concentrate of meat texture fish protein as the protein ingredient for Xiao long baozi meat filling. Furthermore, the method includes considering a production method of unheated meat filling and a production method of well-boiled meat filling prepared in a microwave oven for a meat filling producing process (A), and using for MTFPC, 2 kinds of MTFPC (X) in a dried granule condition and MTFPC (Y) in frozen raw ground meat condition.
