Abstract:
PROBLEM TO BE SOLVED: To provide a fermented soybean pot which prevents steam exhaust from being inhibited during steam exhaust after steaming, and which can shorten exhaust time.SOLUTION: A fermented soybean pot includes a bottomed processing tank 1 having an opening for putting in/taking out a food material 10 and a rotary driving mechanism 3 for rotating the processing tank 1 vertically, supplies steam in the processing tank while rotating the processing tank 1 in the longitudinal direction and performs steaming of a food material stored in the processing tank. The steam supply to the processing tank during steaming and the steam exhaust from the processing tank after finishing the steaming are performed through a shared steam blowout and exhaust intake nozzle 7. In the case where the exhaust of steam from the processing tank is performed after finishing the steaming, steam supply is performed through the steam blowout and exhaust intake nozzle 7 for a short time, and then, exhaust of the steam in the processing tank is performed.SELECTED DRAWING: Figure 1
