Abstract:
To provide an oil and fat composition for cake doughnut that provides cake doughnut having a small amount of oil absorption and having an excellent texture.SOLUTION: The present disclosure provides an oil and fat composition for cake doughnut that comprises a water-in-oil emulsion, the water-in-oil emulsion comprising, in (A) edible fat and oil, (B) polyglycerol-condensed ricinoleic acid ester and (C) water. The oil and fat composition has a viscosity at 10°C of 100 mPa s or more and 100000 mPa s or less. There is also provided grain flour dough for cake doughnut that comprises, in grain flour, the oil and fat composition for cake doughnut.SELECTED DRAWING: None
