Abstract:

PROBLEM TO BE SOLVED: To obtain an oil and fat composition excellent in oxidation stability and useful as a food material, a health food, etc., by compounding an oil and fat with an ascorbic acid component, a citric acid component and a malic acid component each in an specific amount.
SOLUTION: This oil and fat composition is obtained by compounding 100 pts.wt. of an oil and fat (preferably, an oil and fat containing a highly unsaturated fatty acid) with (A) 0.0001-1 pt.wt. of ascorbic acid and/or its salt and (B) 0.001-1 pt.wt. of at least one kind selected from citric acid, circuit acid salts, malic acid and malic acid salts. Further, the component A and the component B are preferably added to the oil and fat so that they form a W/O-type emulsion. In the composition, especially the taste of the oil and fat containing a highly unsaturated fatty acid is scarcely deteriorated even after long preservation, and the oil and fat composition is preferably used for a modified milk powder for infant.
