CONSTITUTION: In grinding process where subsidiary ingredients are added to ground raw fish meat, neither glucose nor a saccharide is added to it, the ground raw fish meat is colored in favorite color of fried fish ball, so that a sugar- amino reaction is not required, a frying temperature after molding is made into a low temperature ≤140°C, to give the desired extremely thin fried fish ball.
