Abstract:

PURPOSE: To provide the titled food capable of giving a delicious sliced meat having a definite shape, economically, by cutting the back meat of a salmon longitudinally, immersing the meat in Japanese SAKE, smearing salt thereto, bonding with a binder, roasting the bonded meat, and slicing the roast meat.

CONSTITUTION: The back meat of a salmon is cut out longitudinally along the muscle, immersed in SAKE, and smeared with salt. A number of the salted meat slices are arranged perpendicularly to the direction of the muscle, and bonded with a binder. The bonded meat 2a, 2b is roasted and sliced along the direction of muscle of the meat 1 to a number of slices 3 to obtain a sliced food made from salmon meat. The slices 3 are preferably packed in vacuum between a pair of films 4, 5.
