Abstract:
PURPOSE: To produce the titled raw material for confectionery having improved long-term shelf stability and good nutrition balance, by dehydrating an animal or vegetable food raw material under reduced pressure in two stages, deoiling and grinding it into paste.
CONSTITUTION: An animal or vegetable food raw material is added to an edible oil heated to 60W120°C, heated under reduced pressure at 10W20mmHg for about 30min, water-soluble protein and gelatin are coagulated, heated under reduced pressure at 740W760mmHg for about 60min and dehydrated until water content becomes 3W6%. Then, this food raw material is deoiled under reduced pressure and ground.
